Roasted Garlic Chicken
I love a rustic herbaceous, yet juicy red wine with roasted chicken, which also has a great rustic quality to it. The red here shouldn't be too serious, just a fun and juicy wine that allows the chicken to shine. Valpolicella is a juicy and jammy red wine from just outside of Venice and it has a slight herbaceous character. Valpolicella is made by Brigaldara, which costs less than $15. If you want to splurge, try the Valpolicellas from Corte Sant'Alda, which costs around $20-25 and is really delicious.

Taiwanese Fried Chicken and Scallion Rice Noodles
German Riesling would be ideal with this dish. Riesling is an aromatic grape with high levels of flavor and acidity, both are important for pairing with this flavorful dish. Also, Riesling has a lot of fruit which will balance out all the spices. I love the Leitz Rieslings. If you like something with a bit more sugar, try their Leitz Out or something very dry, such as the Eins Zwei Dry. Both are under or around $15 per bottle.

The Pittsburger
Drinking anything but beer with a burger feels simply wrong. The way the bubbles refresh your palate means they go down easily. But just like there are many ways to make a burger, there's a huge range of beers out there; pairing the right ones can make two already delicious things even better. For Rachael's Pittsburger, I like to pair the Ommegang Hennepin beer, which is a Belgian Farmhouse-style Beer made in Cooperstown, N.Y. It is a beautiful golden color and is lightly spiced so that it not only refreshes the palate, but is full-bodied enough to pair well and brings out all of the great flavors in The Pittsburger.

Pepita Pesto Pasta with Roasted Squash
Pesto is one of my absolute favorite sauces. It’s bright green, coats whatever pasta you're putting it on, and when you see it, you know you're in for a ton of flavor. That being said, it can also be a challenge to pair with wine since it’s so flavorful. I really like to go by the old adage, "what grows together, goes together" and pesto is from the coastal area of Italy known as Liguria. If you can find a wine from there, like Bisson Vermentino or Laura Aschero Pigato, they would be ideal matches for this dish. However, those wines can be challenging to find, so I'd recommend going with an aromatic grape, like Sauvignon Blanc, from a warmer area like Chile where you get some tropical notes to balance out the green grassiness (which will complement the herbal pesto well).

Scarpetta Sauvignon Blanc 2010. I love this fresh, crisp Sauvignon Blanc from the Friuli region of Italy to go with the Za'atar Chicken. The chicken has a lot going on with a ton of complex, full-throttle flavor. The Scarpetta will clean the palate while pairing nicely with the herbal flavors. Middle Eastern food and North Eastern Italian wine; it’s just a great pairing.

Smoky Skillet Cacciatore
Monastrell is a Spanish grape from the Jumilla region that is ripe and fruit-forward, which will be great because of the intensity of this dish and will pair well with the tomato and chicken. But the wine also has a spicy component that compliments the smokiness. It’s a bold wine that is needed to pair with such a full-flavored dish. Plus, since it’s not too dry, it goes down easily.

Cabin in the Woods Burgers with Bacon & Eggs
A good Belgian beer, like Duvel beer. As is common in Rachael's recipes, this one does not lack for flavor! There is nothing better than a burger and beer, but for this special burger you need a beer that has more. More flavor, more alcohol, more everything! I love a good Belgian Strong Ale for this pairing and the epitome of that category is Duvel. It is certainly strong which means it won't back down to flavors of the burger, but is still crisp and clean, so you'll want to keep drinking it! Also, it comes in small bottles and 750 ml/25.4ounces, which is great to share with friends.

Beer has a lot of similarities to whiskey. They're both made from the same grains so I like pairing one of my favorite beers with this dish, Brooklyn Lager. It has some whiskey-like flavors which will pair well, but it's also really refreshing — you'll need that because this recipe has a kick!

Prosciutto-Wrapped Chicken with Cannellini Beans
A simple red Tuscan wine from the Sangiovese would be great here! Prosciutto and cannellini beans are typical central Italian foods and as I always say, what grows together, goes together! Also the chicken thighs are more flavorful than white meat and can stand up to a light red.
