I was never one to roast vegetables (other than potatoes, and carrots when preparing a roast chicken), but thanks to you, I now roast practically any veggie that's roastable. Thanks for turning me on to a whole new healthy way to enjoy some otherwise bland, boring veggies. I've got all my friends doing it too, and they all love the great carmelized taste as well as the ease of the preparation.
