Bacon and Eggs
Rachael teaches Regis how to make a breakfast her husband John often makes for her - Bacon and Eggs with Broiled Tomatoes!
Ingredients
- EVOO – Extra Virgin Olive Oil, for drizzling
- 2 slices of bacon, chopped
- 2 eggs
- 2 tablespoons chopped flat-leaf parsley
- Salt and pepper
- 1/4 cup shredded yellow cheddar
Yields: 1
Preparation
In a medium skillet over medium-high heat, drizzle EVOO and add bacon. Cook until crispy, about 2-3 minutes.
Whisk together the eggs, parsley, salt and pepper. Add egg mixture to skillet with bacon and stir around pan until cooked all the way, about 2-3 minutes. Put onto a plate and top with cheese.
Serve with Broiled Tomatoes alongside.
