Mashed Tangy Sweet Potatoes
Serve these tangy sweet potatoes as a side to accompany Rachael's Crunchy Cornmeal Fried Chicken.
Ingredients
- 2 1/2 pounds sweet potatoes, peeled and sliced or cubed into bite-size pieces
- Salt
- 1/2 cup warm chicken stock
- 3/4 cup sour cream or yogurt
- 1 teaspoon orange zest
- Juice of 1/2 orange
- Pinch of cayenne pepper
- 2 tablespoons butter
- A drizzle of honey
- Salt and pepper
Yields: Serves 4-6
Preparation
Place potatoes in a pot, cover with cold water and add some salt. Bring to a boil and cook to tender.
Drain and return potatoes to the warm pot. Mash with stock, sour cream or yogurt, orange zest and juice, cayenne, butter, honey, salt and pepper.
