Pico de Gallo
Try this on top of Rachael's Twice-Baked Jalapeño Popper Sweet Potatoes. You can also try one of these suggested toppings: Jalapeño Yogurt dip or Avocado Tomatillo Salsa.
Ingredients
- 3 medium plum tomatoes, seeded and diced
- 1 small jalapeño pepper, seeded and finely chopped
- 1/2 small onion, finely chopped
- A few sprigs fresh cilantro, finely chopped
- Juice of 1 lime
- Coarse salt, to taste
