For the patties: Chop Shitake mushrooms and sauté them in Olive Oil; cook for 5 minutes and add to 2lbs of ground turkey. Season with salt, pepper and 2 cloves of garlic. Form paddies 2 inches in diameter and sear on medium heat for 4 minutes a side.
For the slaw: Shred carrots and cabbage, in a separate bowl combine all other ingredients, and then mix with cabbage and carrots.
For the sauce: Assemble burgers on a whole wheat bun, top with slaw and drizzle Hoisin sauce on top.
