Simple Chocolate Frosting
Use this as a topping on Rachael's Eclairs or to frost your favorite cake.
Ingredients
- 1/2 8-ounce block cream cheese, softened
- 1 stick butter, softened
- 2 cups confectioner’s sugar
- 1/3 cup cocoa powder
- 1 teaspoon vanilla extract
Yields: enough to frost 1 cake or 16 eclairs
Preparation
In a mixing bowl with a hand mixer or the bowl of a stand mixer fitted with a paddle attachment, beat together the cream cheese and butter on medium speed until smooth and fluffy, 2-3 minutes.
Reduce the mixer speed to low and gradually add the confectioner’s sugar and cocoa powder until incorporated and fluffy. Add the vanilla extract and beat until smooth.
