Ingredients

  • 14 eggs
  • 1/2 cup milk
  • 2 cups shredded cheese
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 pound country-style ground pork sausage
  • 4 cups broccoli florets, thinly sliced
  • 1 medium onion, chopped

Yield

Serves: 8 to 10

Preparation

Preheat oven to 350˚F. In a large mixing bowl, whisk eggs, milk and cheese, and season with salt and pepper. In a large oven-proof 12-inch skillet or cast-iron pan, heat the olive oil over medium-high heat, add the sausage, broccoli and onions and season with salt and pepper, then cook until sausage is cooked through, 8 to 10 minutes. Pour egg mixture over top. Bake until there is a slight wobble in the center of the frittata, 20 to 25 minutes, as the eggs will continue to cook. Let stand 5 to 10 minutes before slicing.
