Preheat oven to 425˚F.
In a small bowl, mix together malt vinegar powder and dehydrated soy sauce.
Line 2 sheet pans with parchment and spray generously with cooking spray. Arrange frozen waffle fries in a single layer. Spray fries generously with cooking spray. Bake until crisp, about 20 minutes.
Carefully transfer hot fries to a large heat-resistant bowl. Spray fries lightly with cooking spray and toss to coat. Sprinkle vinegar mixture over fries and toss to coat. Serve immediately.
