All Salts Are Not Created Equal

Long gone are the days when a little girl in yellow rain gear reigned over the kingdom of salt. These days, cooking's most important seasoning is as varied as the many cuisines it flavors. Rachael sheds some light on all of the various salts available in the market these days to save you from spending too much on ones that just aren't worth the price.

Coarse Kosher Salt - Use for everyday cooking

Sea Salt - Use on the table, in a grinder for extra seasoning

Fleur De Sel - French for "flower of the sea" this salt is quite pricey because it's important from France and hand-harvested. Is it worth the extra money? "To me," says Rachael, "it just tastes like salt."

Grey Salt - This salt is grey in color because it has all the minerals still in it. It too is hand-harvested and has an earthy flavor to it that adds a depth of flavor to your cooking.

Smoked Salt - Smoked salts have great added flavor and are great for dipping. Rachael uses one with ground chipotle peppers, making it spicy and smoky at the same time.

"For a special occasion or holiday entertaining, play around with some of these salts," says Rachael. "They're kind of fun!"
