Turning School Lunches into Art

How do you get your kids excited about eating a healthy lunch? Turn it into a work of art! "Some of the lunches that I've done are Batman, Robin, Curious George, Super Mario," says stay-at-home dad Kai, who cuts up brightly colored fruits with eggs, cheese and nuts to create adorable characters his son will recognize. "I feel happy that he makes them for me," says 5-year-old Laddie, "and I feel really lucky!"

Kai, 35, came up with the idea when Laddie started school. "I thought maybe something like this will help ease the transition a little bit. He'll have a little surprise in the middle of the day," Kai says. "I like the idea of being there with him at lunch, giving him something to remind him that his parents are thinking about him and that we can kind of be with him in spirit even if we can't sit with him at the lunch table every day."
