"When we moved into our guest house, the counter that I work on is a couple feet shorter than in the home that I was living in for 15 years. So my sister Maria, who I love so much, gave me a collapsible cart," Rach says.
"It can fold up and just tucks away, [but] it hasn't been collapsed in seven months, because it has become so essential to our work here. It's an extra two feet of counter space every day. When I get up at 4:30 every day, I break down meals for our entire day, and I put the books or the papers or the mail that comes in on the bottom shelf. The middle shelf is a kind of catch-all for John's drink prep or if we have to do a third show."
