We know what you're thinking -- how can a grilled cheese *possibly* be good without BREAD?!
But you just have to trust us (or, you know, Rach)!
In her healthy twist on a traditional grilled cheese, Rach swaps bread for nut-coated beefsteak tomatoes -- without forgoing the cheesy goodness we all know and love.
Rach prefers Swiss cheese in her grilled sammie, but you can use whatever cheese you'd like! And as for the ground nuts, she suggests using almonds, walnuts or pecans.
"If you're like me and you really like the marriage of nice gooey melted cheese and tomatoes," Rach promises, "you're going to love this."
"We replace the bread with a lot of crunch and a lot of protein," she continues.
Low-carb grilled cheese? Yes, please!
