Fill a countertop fryer with canola oil or pour 3 inches of oil into a large Dutch oven. Heat the oil to 375F.
While the oil is heating up, set up 3 shallow dishes on the counter: Place about a cup of flour in one dish. In the next dish, beat the eggs with hot sauce, 4 tablespoons flour, salt and pepper. In the last dish, combine breadcrumbs with grated cheese, salt, pepper and cayenne.
Coat the green beans in flour, the egg mixture then the breadcrumb mixture, pressing to set coating.
Fry the green beans in small batches for about 3 minutes, or until they are golden brown. Drain on paper towels and season with sea salt.
Heat a small saucepot over medium heat with the butter and hot sauce; stir to combine and pour into a large bowl. Place hot fried green beans in the bowl and toss to combine. Serve immediately.
