This recipe is a “dump and stir.” David peels his sweet potatoes and cuts them into chunks, then adds butter, pineapple chunks, molasses, fresh grated nutmeg, cinnamon and brown sugar. Stir it up, then cook in the crock pot. When cooked, make a slurry of pineapple juice and cornstarch, then add back in to thicken up the sauce. Right before serving, carefully fold in chopped toasted walnuts. Delish!
No. 2: Cheesy Creamed Corn Pudding
This deliciously sweet and savory corn pudding is a traditional dish in Amish Country. David mixes eggs, cream, corn, creamed corn, sugar, flour, panko bread crumbs, a touch of smoked paprika, parsley, Parmesan and cheddar cheese. Yum!
