Sammy’s version of huevos rancheros is more like breakfast nachos, but who’s complaining? He sautees ground beef, onions, jalapeno and tomato then serves over tortilla chips with over easy eggs with hot sauce, pico de gallo, cilantro and queso fresco on top.
Tip: If you like your eggs a little undercooked, you can put the eggs under the meat, and the meat will finish cooking them.

These delish and super easy rotisserie chicken enchiladas are served with a delish green tomatillo salsa.
This deliciously decadent, but not all that bad for you, recipe can be made in 30 minutes! Rach calls it a fakeout, because she lightens it up. She starts with charred poblano chile “boats” which she fills with refried beans, tortilla chips, pico de gallo and cheese, then bakes. She tops with sour cream, green onion and pickled sliced jalapenos and serves -- so easy and so delicious!
No. 7: Emeril Lagasse’s Barbacoa Tacos
Emeril’s delish tacos are a different way to use a chuck roast, if you’re not feeling stew or pot roast. The meat is slow cooked until it is so tender that it falls apart, then served up with salsa, cream and avocados on tortillas.

This rich and flavorful traditional Latin dish features a brilliant red sauce and rice cooked right in the sauce with the chicken, so it absorbs all of those complex, beautiful flavors. Restauranteur Aaron says you’ll be eating the leftovers at midnight in your undies – it’s that good!
