Whether you prefer white or red, there are virtually unlimited ways to cook with wine. Read on for seven savory options.
No. 1: Pub Cheeseburgers with Warm Roast Fingerling Potato Salad
This cheeseburger has it all – a crisp toasted Brioche bun, lettuce, tomatoes, onions, bacon and homemade pub cheese featuring wine. Rach serves with a warm, vinegar-based potato salad.
No. 2: Roast Pork Loin with Crispy Potatoes and Green Beans with Tomatoes
Rach roasts a pork loin with wine and herbs, then serves with roasted green beans and tomatoes, and the most delicious twice-cooked smashed fried potatoes.
No. 3: Chicken Cacciatore with Roasted Peppers
For this mouthwatering cacciatore, Rachael simmers chicken in a sauce of red wine, tomato paste, celery, garlic, mushrooms, herbs, canned tomatoes and lots of peppers.
No. 4: Drunken Spaghetti with Mushrooms and Chard
For this dish, your pasta “drinks” up red wine until it’s infused. Rach tosses it with sautéed lardons, chard, baby portobellos and grated Pecorino or Parimigiano-Reggiano – yum!
No. 5: Jacques Pepin's Fondue with Pesto
What better way to eat your cheese than via bread dipped in a creamy wine-infused fondue? This recipe came to us from legendary chef Jacques Pepin.
Rach starts by sauteeing pancetta with leeks and garlic, then adds peas, white wine, chicken stock and escarole, then tosses it all with al dente bucatini, parsley and mint for a fresh and delicious spring dinner.
These earthy beef meatballs are “drunken” due to the inclusion of red wine, and also feature sage, parsley, garlic and Parmigiano-Reggiano.
