Rach likes to serve these Mashed Sweet Potatoes with Orange Marmalade alongside her Bacon-Wrapped Chicken with Herbs.
Place sweet potatoes in a pot, cover with cold water, bring to boil and add salt to water; cook to tender. Drain potatoes and return to hot pot. Season with salt and pepper. Mash with marmalade, chicken stock, thyme, nutmeg, cinnamon and butter, if using. Adjust seasonings to taste.
