Nuking sweet potatoes in the microwave means they basically cook themselves (in under 10 minutes!) before being topped with butter, cinnamon, honey and fresh sage.

Ingredients

  • 4 large sweet potatoes
  • 4 to 5 tablespoons butter or truffle butter
  • 1 teaspoon ground cinnamon
  • 3 tablespoons coconut nectar, honey, agave nectar or brown rice syrup
  • 3 tablespoons chopped fresh sage
  • Parmesan, for grating
  • Salt and pepper

Yield

Serves: 6 to 8

Preparation

Place sweet potatoes in a microwave-safe container with a few tablespoons of water. Cook until tender, about 7 minutes. Split in half after cooking. Top the cut-side of each sweet potato with remaining ingredients to taste. Season with salt and pepper.
