"If you have little kids who are picky eaters, this is a great and easy recipe to make," says Camila McConaughey, mom of three, entrepreneur and Women of Today founder. You can use whatever toppings you like, and even make a "kid" side and an "adult" side, dividing the ingredients according to people's preferences. 

Speaking of food preferences, Camila and Adam Mansbach's new children's book, Just Try One Bite, presents a role reversal in which the adults are the picky eaters and the kids are trying to get them to expand their palates. It's fun and clever and the illustrations are spot on, too! 

Pro Tip from Camila: If you want to keep the meat mixture mild, leave out the cayenne pepper.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 to 2 cloves garlic, minced
  • 1 pound ground turkey or beef
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon cayenne pepper (if you like spice)
  • ½ teaspoon salt
  • 1 bag of your favorite tortilla chips
Topping Choices:
  • Shredded cheddar cheese
  • Canned black beans, drained and rinsed
  • Chopped tomatoes
  • Sauteed peppers and onions
  • Jalapeno slices (if you like spice)
  • Chopped cilantro
  • Avocado slices
  • Lime wedges
  • The Easiest Salsa Ever or your favorite salsa

Preparation

Preheat the oven to 350°F.  

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and saute until the onions are translucent, about 5 minutes. Add the ground turkey or beef and the remaining seasonings and cook, breaking up the meat and stirring occasionally, until the meat is well browned.  

On a rimmed baking sheet, cover the bottom with a layer of tortilla chips. Sprinkle the meat mixture over the tortilla chips and top with any of the suggested toppings, except the avocado, lime wedges and salsa. 

Bake until the cheese has melted, 5 to 8 minutes. If using avocado and/or lime wedges, place them on the nachos. Serve with salsa, if you like.
