When you entertain, he says, organization is key when you don't have much space to prepare the meal. "I always put notes on my cupboards and I make lists and I scratch things off. Prioritize what you can do ahead of time and what you can do closer to serving and I think that will really help you in a small kitchen." And Rachael says she has another tip for small kitchens: "Increase your counter space in clever ways, like buy a giant cutting board and put it over your sink so that when you're not using your sink it's more counter space."
**What simple recipes can I serve as a host to look like an Iron Chef?** "Fish tacos are something I make a lot, especially as it's getting warmer now, because you can make things ... like sauces and salsas ahead of time. Then all you need to do is either grill or sauté your fish, or bake it — however you're going to cook it — at the very last minute and then you have an array of things on the table. It's interactive and you don't have to do every single thing for your guests."
